  1. 11. Roast red peppers under the grill or in a dry griddle pan until charred on all sides. Place in a bowl and cover to steam loose the skins; peel, deseed and slice.\n2. Cook Puy lentils per packet instructions; drain and keep warm.\n3. Drain butter beans and olives.\n4. Whisk together olive oil, sherry vinegar, garlic and smoked paprika for the dressing.\n5. In a large bowl, combine warm lentils, butter beans, roasted peppers, olives and red onion.\n6. Pour dressing over; toss and serve warm with fresh parsley.
