👨‍🍳 Method
  1. 1Cook basmati rice per packet instructions.
  2. 2Heat oil in a large pan or wok over medium heat. Fry Thai green curry paste for 2 minutes until fragrant.
  3. 3Add garlic and cook 1 minute.
  4. 4Dice chicken breast and add to the pan. Cook until sealed, about 4 minutes.
  5. 5Pour in coconut milk and fish sauce. Simmer for 12 minutes until chicken is cooked through.
  6. 6Stir in frozen spinach and cook 2 more minutes.
  7. 7Serve curry over rice.
