👨‍🍳 Method
  1. 1Dice sweet potatoes into 1cm cubes. Parboil for 5 minutes, then drain well.
  2. 2Heat olive oil in a large frying pan over medium-high heat. Add sweet potato and cook 8-10 minutes, stirring occasionally, until golden and crispy.
  3. 3Dice bacon and add to pan. Cook 3 minutes.
  4. 4Add diced peppers and onion; cook 4 minutes until softened.
  5. 5Make 2 wells in the hash. Crack an egg into each. Cover and cook 3-4 minutes until whites are set.
  6. 6Season and serve straight from the pan.
