👨‍🍳 Method
  1. 1Preheat oven to 190°C. Cook white rice per packet instructions.
  2. 2Halve peppers lengthwise and remove seeds. Place cut-side up on a baking tray.
  3. 3Dice onion and fry in olive oil with garlic for 4 minutes. Add beef mince and brown for 5 minutes.
  4. 4Stir in tinned tomatoes and tomato purée. Simmer 5 minutes. Mix in cooked rice.
  5. 5Fill pepper halves with the beef mixture. Top with grated cheddar.
  6. 6Bake for 20 minutes until peppers are tender and cheese is golden.
