👨‍🍳 Method
  1. 1Preheat oven to 200°C. Cut potatoes into wedges.
  2. 2Toss potatoes with olive oil and spread on a baking tray. Roast 20 minutes.
  3. 3Add peppers, courgettes, cherry tomatoes, and garlic to another tray with olive oil. Roast for 15 minutes.
  4. 4Heat a pan over high heat until smoking. Season steaks generously.
  5. 5Sear steaks 2-3 minutes each side for medium-rare. Rest 3 minutes.
  6. 6Drizzle balsamic vinegar over roasted veg.
  7. 7Slice steaks and serve with veg and potatoes.
