👨‍🍳 Method
  1. 1Whisk eggs with a splash of milk. Season with black pepper.
  2. 2Heat olive oil in a non-stick frying pan over medium heat. Wilt spinach for 1 minute, then push to one side.
  3. 3Pour in eggs and tilt pan to spread. As edges set, pull inward gently.
  4. 4When top is almost set, crumble feta over one half.
  5. 5Add spinach on top of feta. Fold omelette and slide onto plate.
