  1. 11. Cook Puy lentils per packet; drain and keep warm.\n2. Roast red peppers under the grill until charred; steam and peel, then slice.\n3. Flake smoked mackerel into large pieces, removing any skin and bones.\n4. Whisk together olive oil, lemon juice, garlic and wholegrain mustard for the dressing.\n5. In a bowl, combine warm lentils, rocket, red peppers and cucumber.\n6. Add mackerel flakes and fresh mint. Pour dressing over; toss gently and serve.
