👨‍🍳 Method
  1. 11. Place sliced aubergine and green beans in the bottom of the slow cooker.\n2. Add chicken thighs; spoon over Thai green curry paste and stir to coat.\n3. Pour in coconut milk and chicken stock; add fish sauce, lime and lemongrass.\n4. Cook on LOW for 4 hours or HIGH for 2.5 hours.\n5. Stir in baby spinach and fish sauce to taste.\n6. Serve over jasmine rice with fresh Thai basil.
