  1. 11. Place all ingredients in the slow cooker: red lentils, onions, garlic, tomatoes, coconut milk, stock and spices.\n2. Cook on LOW for 5 hours or HIGH for 3 hours — lentils should be completely soft.\n3. Stir in spinach until wilted.\n4. Season with salt, lemon juice and extra garam masala to taste.\n5. Serve with basmati rice, naan or flatbread.
