  1. 1Snap off woody asparagus ends. Blanch in salted boiling water 3 minutes; drain.
  2. 2Pat sea bass dry and score skin. Season.
  3. 3Heat olive oil in a pan over high heat. Cook sea bass skin-side down for 4 minutes, pressing gently. Flip; cook 2 more minutes.
