👨‍🍳 Method
  1. 1Place couscous in a bowl. Pour over 240ml boiling water, cover and leave 5 minutes. Fluff.
  2. 2Pat sea bass dry and score skin. Season.
  3. 3Heat olive oil in a pan over high heat. Cook sea bass skin-side down for 3-4 minutes. Flip and cook 1-2 more minutes.
  4. 4Halve cherry tomatoes.
  5. 5Toss couscous with olive oil, lemon juice, tomatoes, and rocket.
  6. 6Serve sea bass over couscous.
