  1. 1Snap off woody asparagus ends. Blanch in salted boiling water 3 minutes; drain.
  2. 2Season steaks generously with salt and pepper.
  3. 3Heat olive oil in a pan until very hot. Sear steaks 2-3 minutes each side for medium-rare. Rest 5 minutes.
  4. 4In the same pan over medium heat, add butter until it turns golden brown and nutty.
