👨‍🍳 Method
  1. 1Preheat oven to 200°C. Peel and cube butternut squash; spread on a tray with diced onion.
  2. 2Drizzle with olive oil, season and roast 30 minutes until soft and caramelised.
  3. 3Transfer to a blender with garlic, coconut milk and 300ml water.
  4. 4Blend until smooth, adding more water to desired consistency.
  5. 5Pour into a pan, heat through, adjust seasoning and serve.
