👨‍🍳 Method
  1. 1Dice onion and fry in olive oil over medium heat 5 minutes.
  2. 2Add garlic and cook 1 minute.
  3. 3Add red lentils, tinned tomatoes and 600ml water. Stir well.
  4. 4Simmer 20 minutes until lentils are soft.
  5. 5Stir in coconut milk, season generously and serve.
