👨‍🍳 Method
  1. 1Preheat oven to 190°C.
  2. 2Halve courgettes lengthways; scoop out the flesh to create hollow boats.
  3. 3Dice the scooped flesh; fry in olive oil for 3 minutes. Set aside.
  4. 4Fry onion and garlic 4 minutes. Add Quorn mince; cook 5 minutes until browned.
  5. 5Mix in passata, tomato puree, dried oregano and the cooked courgette flesh. Season.
  6. 6Fill each courgette boat with the Quorn mixture. Place in a baking dish.
  7. 7Top with cheddar. Cover with foil.
  8. 8Bake 25 minutes; remove foil for final 5 minutes until cheese is golden.
