👨‍🍳 Method
  1. 1Cook basmati rice according to packet; keep warm.\n2. Pat prawns dry. Season with salt, pepper and a pinch of turmeric.\n3. Heat olive oil in a wok over high heat. Add prawns and stir-fry 2-3 minutes until pink. Remove.\n4. Add butter to the wok. Sauté white onion for 2 minutes until softened.\n5. Add sweetcorn and cook 2 minutes until slightly charred.\n6. Add baby spinach and stir-fry until wilted.\n7. Return prawns. Add soy sauce, lime juice and chilli flakes. Toss well.\n8. Serve over rice with a wedge of lime and fresh coriander.
