👨‍🍳 Method
  1. 1Preheat oven to 200°C.
  2. 2Season pork tenderloin with salt and pepper. Sear in an oven-safe pan with olive oil over high heat, 2 minutes each side.
  3. 3Transfer to the oven and roast for 15-18 minutes until internal temp reaches 63°C. Rest 5 minutes, then slice.
  4. 4Meanwhile blanch green beans in boiling water 3 minutes; drain.
  5. 5In the same pan cook Dijon mustard and balsamic vinegar together for 1 minute.
  6. 6Toss green beans in the pan to coat.
  7. 7Serve sliced pork with green beans and pan sauce.
