👨‍🍳 Method
  1. 1Boil eggs for 6 minutes for a soft centre. Cool in cold water, peel, and halve.
  2. 2Slice pork belly into thin strips and fry in a dry pan over high heat until crispy, about 6 minutes.
  3. 3In a large saucepan bring 600ml water to a simmer. Add soy sauce and garlic.
  4. 4Cook egg noodles per packet instructions, drain, and divide between bowls.
  5. 5Add sliced mushrooms and pak choi to the broth for 3 minutes.
  6. 6Ladle broth and veg over noodles. Top with pork belly strips, halved eggs, and spring onions.
