👨‍🍳 Method
  1. 11. Heat coconut oil in a large pan over medium-high heat. Brown beef mince 5-6 minutes, breaking it up, until sealed. Remove.
  2. 22. Cook onion in the same pan 12 minutes until very dark and caramelised. Add ginger and garlic; cook 2 minutes.
  3. 33. Add tikka masala paste, ground cumin, turmeric, chilli powder and black pepper; stir 1 minute until fragrant.
  4. 44. Add passata, chicken stock and a squeeze of lime; stir and bring to a simmer.
  5. 55. Return beef to the pan; cover and cook on low heat 35-40 minutes until beef is tender and sauce has reduced to a thick madras consistency.
  6. 66. Finish with fresh coriander, adjust heat with extra chilli flakes if needed, and serve with basmati rice.
