👨‍🍳 Method
  1. 1Cook white rice per packet instructions.
  2. 2Fry diced onion in olive oil for 5 minutes until golden.
  3. 3Add garlic and tomato purée, cook 2 minutes.
  4. 4Add red lentils, tinned tomatoes, coconut milk, and 300ml water.
  5. 5Bring to a simmer and cook for 20 minutes until lentils are soft, stirring occasionally.
  6. 6Stir in frozen spinach and cook 3 more minutes. Season generously.
  7. 7Serve over white rice.
