👨‍🍳 Method
  1. 1Preheat oven to 200C. Cube potatoes and par-boil 5 minutes; drain.\n2. Toss potatoes with half the olive oil, lemon juice, garlic and rosemary. Spread on a sheet pan.\n3. Coat chicken thighs in remaining olive oil and remaining lemon juice. Season well.\n4. Lay chicken thighs skin-side up over the potatoes.\n5. Roast 35-40 minutes until chicken is golden, skin is crispy and potatoes are tender.\n6. Rest 3 minutes then serve with pan juices spooned over.
