👨‍🍳 Method
  1. 1Butterfly chicken breasts (cut horizontally to flatten). Place in a shallow dish.\n2. Mix olive oil, lemon juice, minced garlic, smoked paprika and oregano. Pour over chicken and coat well. Leave to marinate at least 10 minutes.\n3. Heat a griddle pan or grill to high heat.\n4. Cook chicken 4-5 minutes per side until cooked through (no pink).\n5. Rest for 3 minutes on a warm plate.\n6. Mix Greek yoghurt with lemon zest, fresh mint and a pinch of salt for the dressing.\n7. Serve chicken sliced over a salad with the yoghurt-mint dressing drizzled over.
