👨‍🍳 Method
  1. 1Preheat oven to 200°C. Coat chicken thighs in harissa paste.
  2. 2Slice courgettes; place courgettes and cherry tomatoes in a large roasting tin.
  3. 3Lay chicken over the veg. Drizzle olive oil over everything.
  4. 4Roast 30 minutes until chicken is cooked through and veg is caramelised.
  5. 5Pour boiling water over couscous; cover 5 minutes and fluff.
