👨‍🍳 Method
  1. 1Cook quinoa according to packet instructions (usually 15 mins), drain and cool slightly.
  2. 2Slice halloumi into 1cm slabs and pat dry.
  3. 3Heat a non-stick pan over high heat. Fry halloumi 2–3 minutes per side until golden.
  4. 4Slice cucumber and halve cherry tomatoes.
  5. 5Arrange spinach as a base on a plate.
  6. 6Top with quinoa, cucumber, cherry tomatoes, and spring onions.
