👨‍🍳 Method
  1. 1Cook bulgur wheat per packet instructions, drain and cool slightly.
  2. 2Toss raw king prawns with olive oil, smoked paprika, garlic, and salt.
  3. 3Heat a griddle pan over high heat until smoking. Cook prawns for 2 mins per side until pink and slightly charred.
  4. 4Make the dressing: whisk lemon juice, garlic, olive oil, and salt.
  5. 5Halve cherry tomatoes and slice cucumber.
  6. 6Toss cooled bulgur with cucumber, tomatoes, most of the coriander, and the dressing.
  7. 7Arrange on plates, top with griddled prawns, and scatter remaining coriander.
