👨‍🍳 Method
  1. 11. Slice halloumi into 1cm-thick pieces. Pat dry with kitchen paper.\n2. Heat a griddle pan over high heat. Cook halloumi 2-3 minutes per side until golden with distinct char marks. Remove and set aside.\n3. Whisk together pomegranate molasses, olive oil, lemon juice and garlic for the dressing.\n4. Arrange rocket and cucumber on plates.\n5. Place grilled halloumi slices on top.\n6. Scatter pomegranate seeds, red onion and fresh mint over. Drizzle dressing over and serve immediately.
