👨‍🍳 Method
  1. 1Preheat oven to 200°C. Cut sweet potatoes into thick wedges; toss with olive oil and smoked paprika. Spread on baking tray.
  2. 2Bake wedges for 20 minutes, turning once halfway.
  3. 3Meanwhile, butterfly chicken breasts (slice horizontally to flatten for even cooking).
  4. 4Rub with olive oil, garlic, salt and pepper.
  5. 5Heat a griddle pan or grill until very hot.
  6. 6Cook chicken 4-5 minutes per side until cooked through (no pink). Rest 3 minutes.
  7. 7Mix Greek yoghurt with chives and a squeeze of lemon for the sauce.
