  1. 1Peel and cube sweet potatoes. Boil in salted water 12-15 minutes until tender. Drain and mash with butter. Season.
  2. 2Score duck breast skin in a cross-hatch pattern. Season generously.
  3. 3Place duck skin-side down in a cold pan. Heat to medium. Cook 10 minutes until skin is golden and crispy.
  4. 4Flip duck; cook 4-5 minutes for medium-pink. Rest 5 minutes, then slice.
  5. 5In the same pan wilt spinach for 2 minutes.
  6. 6Drizzle honey over duck.
  7. 7Plate mash, top with duck and spinach.
