👨‍🍳 Method
  1. 1Score pork belly skin if intact. Season with salt.
  2. 2Cook pork belly in a cold pan on medium-high, skin-side down, for 15-18 minutes until skin is golden and crispy. Flip for 3-4 minutes. Remove.
  3. 3Pour off most fat. Add courgette slices to the same pan; fry 3-4 minutes until golden.
  4. 4Add garlic and cherry tomatoes; cook 2 minutes.
