👨‍🍳 Method
  1. 1Cook wholewheat pasta in salted boiling water until al dente. Reserve ½ cup pasta water.
  2. 2Slice mushrooms and dice onion.
  3. 3Heat olive oil in a large pan. Fry onion for 4 minutes, add garlic and mushrooms, cook 5 minutes until golden.
  4. 4Pour in double cream and season. Simmer 3 minutes.
  5. 5Add drained pasta and spinach. Toss, adding pasta water if needed.
  6. 6Serve with grated parmesan.
