  1. 11. Season chicken with tikka masala paste and salt. Cook in coconut oil in a pan over medium-high heat 5-6 minutes per side. Rest 3 minutes, then shred into pieces.\n2. Mix mayonnaise with additional tikka masala paste, sweet chilli sauce and a squeeze of lemon. Season with salt.\n3. Fold the shredded chicken through the coronation mayo until well coated.\n4. Toast sourdough bread; spread with a thin layer of mayonnaise.\n5. Spoon the coronation chicken mixture on top.\n6. Add lettuce and cucumber. Close, cut and serve.
