👨‍🍳 Method
  1. 1Cut chicken into chunks. Mix with tikka paste and yoghurt, marinate 10 mins.
  2. 2Cook basmati rice per packet (15 mins), fluff with a fork.
  3. 3Heat oil in a large pan. Fry onions and garlic for 5 minutes until soft.
  4. 4Add marinated chicken and cook until sealed, about 5 minutes.
  5. 5Stir in tinned tomatoes and bring to a simmer.
  6. 6Add coconut milk and cook on low heat for 15 minutes.
  7. 7Season to taste, stir in a handful of spinach to wilt.
  8. 8Serve over basmati rice, garnish with a swirl of yoghurt.
