👨‍🍳 Method
  1. 1Cook egg noodles per packet instructions; drain and set aside.
  2. 2Cut chicken into thin strips. Slice mushrooms and pak choi.
  3. 3Heat coconut oil in a wok over high heat until shimmering.
  4. 4Add chicken strips and stir-fry 5-6 minutes until cooked through. Remove and set aside.
  5. 5Add garlic and fresh ginger; stir-fry 30 seconds.
  6. 6Add mushrooms and pak choi; stir-fry 3 minutes until wilted.
  7. 7Return chicken to the wok. Add noodles and soy sauce; toss everything together over high heat for 1-2 minutes.
