  1. 1Cut chicken thighs in half. Dice carrots.\n2. Place all vegetables in the bottom of the slow cooker.\n3. Add chicken stock, tomato puree and bay leaves.\n4. Lay chicken thighs on top of the vegetables. Season well.\n5. Cook on LOW for 7-8 hours or HIGH for 4-5 hours until chicken is tender.\n6. Season to taste. Remove bay leaves.\n7. Serve with crusty bread or mashed potatoes.
