👨‍🍳 Method
  1. 1Cook egg noodles according to packet instructions; drain and set aside.\n2. Slice chicken breast into thin strips. Season with salt and pepper.\n3. Heat sesame oil in a large wok over high heat. Add chicken and stir-fry 4-5 minutes until golden. Remove and set aside.\n4. Add olive oil to the wok. Stir-fry red and green peppers for 3-4 minutes.\n5. Add minced ginger and garlic; cook 30 seconds until fragrant.\n6. Add baby spinach and stir-fry until just wilted.\n7. Return chicken to the pan. Add soy sauce and a splash of water. Toss together.\n8. Add drained noodles and toss over high heat for 2 minutes.\n9. Serve immediately, garnished with fresh coriander.
