👨‍🍳 Method
  1. 1Cook white rice per packet instructions.
  2. 2Slice chicken breast in half lengthwise. Pan-fry in olive oil over medium-high heat, 5 minutes each side until golden.
  3. 3In a separate pan, fry diced onions in olive oil for 5 minutes. Add garlic and curry paste, cook 2 minutes.
  4. 4Pour in coconut milk and simmer for 10 minutes until sauce thickens.
