👨‍🍳 Method
  1. 11. Heat coconut oil in a large pan over medium heat. Fry sliced onions 12-15 minutes until deep golden and starting to stick.
  2. 22. Add ginger and garlic; cook 2 minutes until fragrant.
  3. 33. Add tikka masala paste, ground cumin, turmeric and chilli flakes; stir 1 minute.
  4. 44. Add chopped tomatoes and chicken stock; stir to combine.
  5. 55. Add chicken thighs; bring to a simmer, cover and cook 20 minutes until chicken is cooked through.
  6. 66. Stir in fresh coriander; cook uncovered a further 5 minutes until sauce has reduced to a thick bhuna consistency. Serve with basmati rice.
