👨‍🍳 Method
  1. 1Cube cauliflower into florets.
  2. 2Heat curry paste in a large pan with olive oil 1 minute.
  3. 3Add cauliflower; coat in the paste and cook 3 minutes.
  4. 4Add chickpeas, tinned tomatoes and coconut milk. Stir well.
  5. 5Add bay leaf; simmer 20 minutes until cauliflower is tender.
  6. 6Cook basmati rice per packet. Remove bay leaf and serve curry over rice.
