👨‍🍳 Method
  1. 1Preheat oven to 180°C. Dice onion and carrots; slice potatoes thinly.
  2. 2Brown beef mince in olive oil over high heat 5-6 minutes.
  3. 3Add onion, carrots and tomato purée; cook 3 minutes.
  4. 4Transfer to a deep ovenproof dish; season and pour 200ml water over.
  5. 5Layer sliced potatoes over the top, overlapping.
  6. 6Drizzle potato layer with olive oil, cover with foil. Bake 30 minutes; remove foil, bake 15 minutes until potato is golden.
