👨‍🍳 Method
  1. 1Cut beef into 3cm chunks. Dice potatoes into 2cm cubes.
  2. 2Heat olive oil in a large casserole over high heat. Brown beef in batches, 3 minutes per side. Remove.
  3. 3Reduce heat to medium; fry onion 4 minutes.
  4. 4Add garlic and curry paste; cook 1 minute.
  5. 5Return beef to the pot. Add potato, tinned tomatoes, and coconut milk.
  6. 6Add bay leaves and season with salt.
  7. 7Bring to a simmer, cover, and cook on low heat 40 minutes until beef is tender.
