👨‍🍳 Method
  1. 1Preheat oven to 200C.\n2. Cut sweet potatoes into chunky chips. Toss with olive oil, smoked paprika, salt and pepper. Spread on a large baking tray. Roast 15 minutes.\n3. Meanwhile, pat cod fillets dry. Season with salt, pepper and a little lemon zest.\n4. Mix breadcrumbs with melted butter, lemon zest and dried oregano. Press firmly onto the top of each cod fillet.\n5. Add frozen peas to a small pan with butter and a splash of water; heat gently until warmed through.\n6. After 15 minutes, push sweet potato chips to the edges of the tray. Place cod fillets in the centre.\n7. Return to oven for 18-20 minutes until fish flakes easily and chips are golden.\n8. Serve with mushy peas and a wedge of lemon.
