👨‍🍳 Method
  1. 1Preheat oven to 200°C. Slice aubergines into 1cm rounds.
  2. 2Brush with olive oil and roast for 15 minutes until golden.
  3. 3In a pan heat remaining olive oil, fry garlic for 1 minute, add tinned tomatoes and passata. Simmer 10 minutes.
  4. 4In a baking dish, layer: tomato sauce, aubergine slices, sliced mozzarella. Repeat.
  5. 5Top with remaining sauce, scatter over parmesan.
  6. 6Bake for 25 minutes until bubbling and golden.
