  1. 1Preheat oven to 200°C. Slice aubergines into 1cm rounds.
  2. 2Brush aubergine slices with olive oil, season, and roast on a tray for 20 minutes, turning halfway.
  3. 3Spread a thin layer of passata in a baking dish.
  4. 4Layer in roasted aubergine, more passata, and sliced mozzarella. Repeat.
